Agoristo⚡️ maya BitBees There is no capable enough open source SoC to use. RISC-V is an open source ISA (instruction set), not an open source CPU architecture. There isn't a good enough open source (or not) CPU based on it and RISC-V has significant limitations itself too. Many important features are only a spec or plan.

Agoristo⚡️ maya BitBees CPU is only one part of the SoC. At the moment, most RISC-V CPUs are closed source and the few open cores are part of an overall non-open-source SoC. That's not even getting into all the other components like the radios (cellular, Wi-Fi, Bluetooth, NFC, UWB, GNSS, etc.), SSD, memory, touchscreen, etc.
