The DID Doc is easier to update: just gotta edit did.json and you're done. With a did:plc, you need to perform an "op", which is kinda easy to screw up (although, there's boat.kelinci.net/plc-applicator to help you, and you have a 72hr undo window).
did:web also means people can't see your handle history, if you're bothered about such a thing, and you can have a truly "clean" exit from ATProto (did:plc is stored at plc.directory which is a forever database).
